Hey Jen, when they are the size of a french bean I sub them in anywhere I'd use a french bean in cooking, and when they are full sized and dry I sub them in instead of any other dry bean or chickpea. So tomato-y/mexican-y things, stews, soups, veggo bolognese. 🧡
